Viticulture is non-invasive, using sickles and manure from their cattle, as well as green fertilisers made from clover and weeds.
For this spritzy natural sparkling, local organic Cortese grapes were hand harvested before fermentation with indigenous yeast in steel tanks. In this part of Italy, frozen must is used to kickstart the second fermentation in bottle. There is no fining or filtration, and minimal sulphur. The result is light and zesty, with a saline finish.
