The domaine s wines are made using a combination of traditional and modern techniques, including cold maceration, hot fermentation, and careful use of oak aging. The Groffiers prefer to plant clones and use a gentle approach to winemaking, resulting in wines with impressive finesse and harmonious tannins. The estate s recent vintages have reduced the use of new oak, and the type of oak used has also changed to gentler Nevers and Allier.
