This Chianti is made from 100% Sangiovese, from a single plot of theFattoria di Sammontana estate's best vines. It spends one year in old barrels followed by a couple of years in the bottle before release. It's bottled with a tiny sulphite addition, unfined unfiltered, and aged in bottle until release. It's generous but restrained, with beautiful bright fruit.

Fattoria di Sammontana is located in Tuscany, near the town of Empoli, in between Florence and Pisa - it's adjacent to a 12th century Roman church and an old convent. The property is currently made up of 16 hectares of vines and more than 3,000 olive trees (they also make amazing oil). The farming has always been organic, and they started farming with biodynamic principles in 2012. In the cellar, the work follows a simple philosophy: do as little as needed but maintain a very clean and high standard of wine production. All of the wines are usually fermented in old concrete vats and aging is done in a mixture of concrete, steel tanks, clay amphoras, and old barrels. The wines are obsessively pure and expressive, and unmistakably Tuscany.
