This artisanal, 96-proof expression represents the culmination of over 70 years of traditional mezcal craftsmanship by Romulo Sanchez Parada and his family collective. The 100% Espadin agave undergoes an authentic production process—underground cooking for 4-5 days, open-air fermentation in wooden vats for up to 12 days, and small-batch distillation in copper pot stills. The resulting spirit delivers complex aromas of alfalfa, green bell pepper, wet slate, and sweet tobacco, followed by a palate featuring fresh tarragon, charcoal, jalapeño, and caramel apple notes.
