Ariyanas David Tinto Dulce merlot 2019 – 0.375L100% merlot. Niet versterkt. De druiven worden aangekocht in Ronda en Montilla Moriles, na een rijp doch niet overrijpe oogst. Bij Bentomiz worden ze drie dagen op zwevende rekken (paseros) gelegd om verder in te drogen. Die paseros laten toe dat er lucht onder de druiven kan stromen, om zo de druiven gezond te houden. Dit maakt dat suikers en zuren verder geconcentreerd worden. Koele maceratie op inoxen cuves aan 10C om de alcoholische gisting tegen

Bij Bentomiz worden ze drie dagen op zwevende rekken (paseros) gelegd om verder in te drogen. Die paseros laten toe dat er lucht onder de druiven kan stromen, om zo de druiven gezond te houden. Dit maakt dat suikers en zuren verder geconcentreerd worden. Koele maceratie op inoxen cuves aan 10°C om de alcoholische gisting tegen te houden tot de wijn voldoende kleur heeft verkregen. Daarna start een natuurlijke gisting van 10 dagen. Deze gisting wordt gestopt door een zogenaamd 'cold shock', bij -3/-4°C. Gevolgd door 4 maanden rijping op Franse eiken vaten van 225L. Daarna nog 3 jaar extra rijping op fles.

Frisse aroma’s van kersen, vijgen, pruimen en zwarte bessen. Intens in de mond, zoet maar allesbehalve plakkerig, met een mooi evenwicht tussen suiker, zuren en tannines. 

Past bij fruitdesserts, zwarte chocolade, harde kazen, blauwschimmelkazen, maar bijvoorbeeld ook bij wild…
