Zijn wijnen zijn Biologisch en, een stapje daarboven, ook Demeter gecertificeerd. De betrokkenheid bij het milieu is groot. Het wijngoed is met zonnepanelen zelfvoorzienend in energie en de caveau is, als eerste in de wereld, opgebouwd uit o.a. hennep, dat CO2 verbruikt. De grotendeels plantaardige materialen maken dat koeling of verwarming niet nodig is om de chais op de juiste temperatuur te houden. Robert Parker's Wine Advocate waardeert de wijnen steevast boven de 90 punten, Wine Spectator kwalificeert ze als outstanding wines. Ontdekt ook door de topgastronomie waar de wijnen van Chateau Mâris de wijnkaarten sieren. De druiven voor deze cuvée groeien opeen geselecteerd perceel van 20 hectare waar het terroir bestaat uit klei, kalk- en zandsteen. Na de fermentatie en een maceratie van een maand vindt een vroege botteling plaats om het frisse en fruitige karakter van de wijn te borgen. Proefnotities: Paarsrood, elegant en complex bouquet van aalbessengrenadine en kersen. Brede, zachte structuur met een expressieve, genereuze fruitige smaak die niet te zwaar is maar fris en sappig met in de finale een heerlijke afdronk. Ideaal drinkmoment 2 tot 5 jaar na de oogst en daarna, mits goed bewaard, nog zeker een paar jaar houdbaar.Paarsrood, elegant en complex bouquet van aalbessen, grenadine en kersen.
