Ogni parcella si differenzia per composizione del suolo e condizioni climatiche. Dopo la pressatura soffice è svolta la fermentazione in acciaio a temperatura controllata, seguita da un affinamento a contatto con le fecce nobili. Un grande bianco, affilato e minerale.
