De Barbaresco Pajoré 2021 is een opvallend precieze en gelaagde Nebbiolo die de finesse van het Pajoré-terroir schitterend weergeeft. De wijn opent met aroma’s van wilde kers, viooltjes, kruiden, teer en rokerige mineraliteit. De smaak is harmonieus en energiek, met helder rood fruit, strakke spanning en elegante tannines. De afdronk is lang, evenwichtig en subtiel kruidig.

Vinificatie.
De druiven worden volledig met de hand geoogst en zorgvuldig geselecteerd. De spontane fermentatie met natuurlijke gisten gaat gepaard met een lange maceratie van 20–25 dagen. Vervolgens ondergaat de wijn malolactische gisting en rijpt hij ongeveer 24 maanden in grote houten botti, voornamelijk gebruikt eiken om finesse en terroir te behouden. Na botteling volgt enkele maanden flesrijping om structuur en aromatische complexiteit volledig te integreren.

Het domein.
Sottimano is een familiebedrijf in Neive dat sinds de jaren ’60 uitgroeide tot een van de meest gerespecteerde producenten van Barbaresco. Het domein bundelt klassieke traditie met moderne precisie, altijd met de ambitie om elk cru-terroir zo puur en helder mogelijk uit te drukken.

De wijngaarden worden duurzaam beheerd, zonder herbiciden, met focus op biodiversiteit, natuurlijke gisten, minimale interventie en respect voor de bodem. De langdurige rijping en zachte vinificatie zorgen voor elegante, terroirgedreven Nebbiolo’s die tot de meest verfijnde van de appellatie behoren.

Only bad thing is that over time the iPad begins to scrape off the pain and it leaves your keyboard with some white spots all over :/ but if looks isn’t something that you care about, this is the keyboard for you. Don’t use it for gaming because there is a delay in functionality when you press a key and then try to use the pad. Also, you have to press the keys a bit harder than the usual keyboard. But for the price? This is a great item! Definitely worth my money
