Chimay is al meer dan 170 jaar een begrip in België. Chimay is een trappistenbier dat in de Abdij Notre-Dame de Scourmont te Chimay gebrouwen wordt. De geschiedenis van Chimay gaat terug tot circa 1850, toen de monniken van Westvleteren de opdracht kregen om een nieuw klooster te vestigen op het plateau van Scourmont om de regio rond Chimay te helpen. Om hun missie te volbrengen besloten de monniken om een bier te brouwen met water uit de moerasachtige plateaus inde omliggende natuur. Zo ontstond in 1862 het allereerste Chimay-bier. Tegenwoordig kent Chimay meerdere verschillende soorten bier waaronder Chimay Grande Réserve.
