Pas eind jaren zestig bottelt opa Aimé zijn eerste eigen wijn. Hij werkt dan al zo natuurlijk mogelijk. Kwestie van levensfilosofie. Guy die in 1979 het stokje van zijn vader overneemt ook. Pas in 1998 laat hij een en ander certificeren wanneer iedereen plots verklaart dat hij ‘en bio’ werkt. Als man van de wijngaard ziet Guy dagelijks dat de praktijk heel anders is.

Beschrijving: Rijpe, donkere kersen, zwarte olijven, peper en specerijen. Zacht, gul met veel energie.

Lekker bij: Lam, steak tartaar, kalfstong, gegrilde groentes.

Leuk weetje: Vanaf 2004 is de jonge Thomas, net afgestudeerd, de derde generatie op de Ferme Saint-Martin. Ook hij draagt het hart op de natuurlijke plaats.
