De wijnen worden na botteling tussen de 30 en 120 maanden gerijpt in de kelders, elke 14 maanden worden de flessen geschud voor de smaakontwikkeling en de flessen worden

Beschrijving: Elegant en royaal, hij heeft wat zout en is licht umami met een fijne mousse.

Lekker bij: Aperitief en lekker bij snacks zoals oesters en frisse koude gerechten.

Leuk weetje: Carpinnat wordt op (bijna) dezelfde manier gemaakt als Cava. Wijnboeren zijn hier mee begonnen omdat ze deze stijl wijn wilde maken, maar dan zonder de Cava-regels en een betere kwaliteit.
