Grown at ~1600MASL in rich volcanic soil and misty micro climates, this lot undergoes a Chilled Cherry Anaerobic Natural process: cherries are washed, chilled to stabilize metabolic activity, fermented anaerobically for 95 hours, then dried slowly over ~293 hours, with a final resting period to round out flavour.
